Let me introduce a cookie that I have loved since I was young. I feel relaxed when I eat it when I’m tired.
“COUNTRY MA’AM” is a popular Japanese cookie brand. These cookies are known for their crispy exterior and soft, chewy interior, resembling freshly baked cookies. The standard flavors vanilla and chocolate. “COUNTRY MA’AM” cookies are loved for their rich, homemade taste and satisfying texture.
I have loved its soft texture since I was little, and at the same time, I always wondered why it was so moist. Then one day, as I grew older and was able to read the ingredients, I came to my own realization. The secret behind its moistness is white bean paste (shiro-an). This is just my personal opinion. But when I realized this, it all made perfect sense to me. The white bean paste doesn’t stand out, but it’s doing a great job. I think using bean paste in cookies is a very Japanese touch.
